Vintage: 2021, for us one of the best vintages of this century, which gave us wines with great fruit expression, elegant and silky, and with a lot of body.
Varietal: 100% Tempranillo from San Quiles, the best plot located at an altitude of 550 metres. This vineyard has calcareous soil that produces wines with high acidity and long ageing potential.
Production: Malolactic fermentation takes place in barrels and it is aged for 8 months in completely new French oak. During this time, we carry out two bâtonnages per week. We work with the barrels in two ways: either we shake them or we let them roll, but we never stir them. Colloquially, we refer to this as a “James Bond” bâtonnage… in the sense that it is “stirred, not shaken”.
Tasting notes: Intense violet colour. Aromas of blackberry and orange peel. Good density on the palate. Bright, velvety tannins. Very subtle wood, with great concentration for ageing.
Pairing: Pasta, rice dishes, well-roasted white meats or meats in sauce.
